Vegetables and Add-Ins
400 g ripe tomatoes
1 large cucumber, about 300 g
1 red bell pepper, about 150 g
1 small red onion, about 80 g
120 g block feta
100 g pitted black olives
1 teaspoon dried oregano
Dressing
4 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Steps
Wash the tomatoes, cucumber, and bell pepper. Cut the tomatoes into large pieces, the cucumber into thick half-moons, and the bell pepper into strips. Peel the onion and slice it into thin slivers.
Transfer the vegetables to a large bowl, add the black olives, and toss gently so as not to crush the tomatoes.
In a small bowl, combine the extra-virgin olive oil, red wine vinegar, salt, pepper, and dried oregano. Stir for about 30 seconds, until the ingredients are combined.
Pour the dressing into the bowl with the vegetables and toss briefly, only until the ingredients are evenly coated. Taste and adjust the salt if needed, keeping in mind that the feta and olives are already salty.
Place the feta in one piece on top of the salad, or cut it into large cubes and add it at the end. Sprinkle everything with a little oregano and serve immediately so the vegetables remain crisp.
