Chicken
600 g chicken breast
1 egg
2 tablespoons milk
1/2 teaspoon salt
1/2 teaspoon sweet paprika
1/4 teaspoon black pepper
Breading
80 g unsweetened cornflakes
60 g breadcrumbs
1 teaspoon dried garlic
1 teaspoon dried oregano
1/2 teaspoon salt
For Baking
2 tablespoons canola oil or olive oil spray
For Serving
garlic sauce, ketchup, or yogurt dip
Steps
Preheat the oven to 220°C and line a baking sheet with parchment paper. If using a convection oven, set it to 210°C.
Cut the chicken into even, bite-size pieces. In a bowl, mix together the egg, milk, salt, paprika, and pepper.
In a second bowl, crush the cornflakes into coarse crumbs and combine them with the breadcrumbs, garlic, oregano, and salt.
Dip each piece of chicken first in the egg mixture, then coat it thoroughly in the breading, pressing lightly so the crumbs adhere.
Arrange the nuggets on the baking sheet with a little space between them, then drizzle with oil or spray the tops evenly.
Bake for 16–18 minutes, turning halfway through, until the coating is golden and crisp and the chicken is cooked through.
Serve right away with your favorite sauce and, if you like, baked potatoes or fresh vegetables.
