Ingredients

500 g fresh or frozen fava beans
100 g feta cheese
2 tablespoons olive oil
1 small clove garlic
1 tablespoon lemon juice
2 tablespoons chopped fresh mint
2 tablespoons chopped fresh dill
1/2 teaspoon salt, or to taste
1/4 teaspoon freshly ground black pepper
2–4 tablespoons cold water, as needed for a creamy consistency
For serving
Crusty bread, toast, or vegetables for dipping
Steps
Add the fava beans to boiling water and cook for 6–8 minutes, until tender but still firm. Drain and rinse under cold water.
If the skins are thick, remove them from each bean. This gives the spread a smooth, more delicate texture.
Reserve 1 teaspoon of the measured olive oil for serving. Add the fava beans, feta, remaining olive oil, garlic, lemon juice, mint, dill, salt, and pepper to a food processor or tall blending container. Process into a coarse spread.
Add the cold water 1 tablespoon at a time, blending briefly after each addition, until the spread is creamy but still slightly rustic. Taste and adjust the seasoning if needed.
Transfer the spread to a bowl, drizzle with the reserved olive oil, and serve with bread, toast, or fresh vegetables.
