Skewers
500 g seedless watermelon
1 large pickling cucumber
200 g feta cheese
16 fresh mint leaves
24 toothpicks or short cocktail skewers
Mint Sauce
200 g thick plain yogurt
1 tablespoon lemon juice
1 teaspoon honey
1 small garlic clove, finely grated or pressed
1 tablespoon finely chopped mint
a pinch of salt
a pinch of freshly ground pepper
Steps
Cut the watermelon into cubes about 2.5 cm on each side. Wash the cucumber and cut it into thick slices; if the skin is tough, peel it partially in strips for a more attractive look.
Cut the feta into cubes similar in size to the watermelon. Rinse and dry the mint leaves, then tear them into a total of 24 small pieces.
Thread watermelon, cucumber, feta, and a piece of mint onto each skewer in that order. Arrange the skewers on a large plate or platter and refrigerate for 15 minutes.
In a small bowl, mix the yogurt, lemon juice, honey, garlic, and chopped mint. Season with salt and pepper, then chill until serving.
Serve the skewers very cold, with the dip alongside or lightly drizzled over the plate. They are best immediately after coming out of the refrigerator.
