  • 1 large head of broccoli

  • 1 onion

  • 1 potato

  • 800 ml vegetable broth

  • 2 tablespoons pumpkin seeds

  • 2 tablespoons cream

Steps

  1. Cut the broccoli into florets, dice the potato, chop the onion, and set the pumpkin seeds aside to add when serving or near the end of preparation.

  2. Cook the onion in 3 tablespoons of the broth for 3–4 minutes, until softened and ready to form the base of the broccoli soup.

  3. Add the broccoli and potato, pour in the remaining vegetable broth, and cook for 15–20 minutes, until the vegetables are completely tender.

  4. Blend the broccoli, potato, and onion with the broth until smooth. Keep the pumpkin seeds aside as a distinct topping for serving.

  5. Stir the cream into the blended soup and heat briefly without boiling vigorously. Add the pumpkin seeds to each serving.
