About this recipe
Green bean soup is a mild vegetable soup made with broth, potatoes, carrot, and sour cream. Green beans bring a fresh flavor with subtle green notes and a pleasant texture, potatoes make the soup filling, and carrot adds gentle sweetness. Sour cream mellows the broth and gives the soup a home-style finish. It is a simple, classic way to use green beans in an everyday vegetable soup.
Ingredients
Servings: 4
300 g green beans
3 potatoes
1 carrot
1 liter vegetable broth
2 tablespoons sour cream
Steps
Trim the green beans and cut them into shorter pieces, dice the potatoes, and cut the carrot into half-moons.
Add the potatoes and carrot to the broth, bring to a boil, and cook for 10–12 minutes.
Add the green beans and cook for another 7–8 minutes.
Temper the sour cream with a few spoonfuls of hot soup, pour it into the pot, and heat for 1–2 minutes without allowing a vigorous boil.
Serve when the green beans are tender but still slightly firm.
