Ingredients

  • 300 g green beans

  • 3 potatoes

  • 1 carrot

  • 1 liter vegetable broth

  • 2 tablespoons sour cream

Steps

  1. Trim the green beans and cut them into shorter pieces, dice the potatoes, and cut the carrot into half-moons.

  2. Add the potatoes and carrot to the broth, bring to a boil, and cook for 10–12 minutes.

  3. Add the green beans and cook for another 7–8 minutes.

  4. Temper the sour cream with a few spoonfuls of hot soup, pour it into the pot, and heat for 1–2 minutes without allowing a vigorous boil.

  5. Serve when the green beans are tender but still slightly firm.
