Creamy green pea and leek soup is a plant-based blend of vegetable broth, potato, and olive oil. Ingredients

  • 350 g peas

  • 1 leek

  • 850 ml vegetable broth

  • 1 potato

  • 1 tablespoon olive oil

Steps

  1. Cut the leek lengthwise, rinse thoroughly between the layers, and slice it into half-moons. Peel and finely dice the potato, and reserve the peas for the end of cooking.

  2. Heat the olive oil in a pot, add the leek, and cook over medium heat for 3–4 minutes, until softened and fragrant.

  3. Add the potato, pour in the vegetable broth, and cook for 15–20 minutes, until the potato is completely tender.

  4. Add the peas once the potato is tender and cook for 4–5 minutes so they retain their color. Blend the soup until creamy and serve promptly rather than holding it in the pot.
