About this recipe
Koperkowa with potatoes is a mild Polish soup made with vegetable broth, carrots, sour cream, and plenty of dill. The potatoes make it filling, the carrot adds gentle sweetness, and the dill brings a fresh, distinctly herbal flavor. Sour cream rounds out the broth and gives it a home-style finish. It is a simple lunch for days when you want something light without tasting thin.
Ingredients
Servings: 4
1 liter vegetable broth
4 potatoes
1 carrot
1 bunch dill
2 tablespoons sour cream
Steps
Cut the potatoes into cubes, slice the carrot, chop the dill, and set the sour cream aside for tempering at the end.
Place the potatoes and carrot in a pot. Pour in 1 liter vegetable broth and cook for 18–25 minutes, until the vegetables are tender.
Once the potatoes and carrot are tender, temper the sour cream with a few spoonfuls of hot broth and pour it into the pot. Add the dill at the very end so it retains its fresh flavor.
