About this recipe

Potato soup with dill is a mild, home-style soup made with vegetable broth, carrot, and sour cream. Potatoes give it a soft texture and make it filling, carrot adds gentle sweetness, and dill brings a fresh herbal aroma. Sour cream rounds out the broth and makes the soup creamy. It is a simple everyday take on classic potato soup, made lighter and flavored with dill.

Ingredients

Servings: 4

  • 500 g potatoes

  • 1 carrot

  • 900 ml vegetable broth

  • 1 bunch dill

  • 2 tablespoons sour cream

Steps

  1. Peel the potatoes and cut them into even cubes, then slice the carrot. Rinse and dry the dill, but wait to chop it until you finish the soup.

  2. Add the potatoes and carrot to the broth. Cook for 18–25 minutes, until the vegetables are tender.

  3. Once the potatoes and carrot are tender, temper the sour cream with a few tablespoons of hot soup and pour it into the pot. Add the dill at the end without cooking it for long.
