500 g potatoes
120 g bacon
1 onion
900 ml vegetable broth
2 tablespoons sour cream
Steps
Peel the potatoes and cut them into even cubes, finely chop the onion, and cut the bacon into small strips or dice. Set the sour cream aside to temper at the end.
Cook the onion and bacon together until the bacon begins to render its fat and become fragrant and the onion softens.
Add the potatoes to the bacon and onion, pour in the vegetable broth, and cook for 18–25 minutes, until the potatoes are tender and the bacon has flavored the soup.
Temper the sour cream with a few tablespoons of hot soup and add it near the end, once the potatoes are tender and the bacon has flavored the broth.
