About this recipe

White bean and kale soup is an easy plant-based soup made with vegetable broth that is satisfying despite its short ingredient list. White beans lend a lightly creamy texture and make the soup more substantial, while kale adds a green, slightly savory note. Onion sautéed in olive oil builds a flavorful base, keeping the soup from tasting flat. This meatless and dairy-free soup is a good everyday option when you want to make something nourishing from simple ingredients.

Ingredients

Servings: 6

  • 1 can white beans

  • 2 handfuls kale

  • 1 onion

  • 900 ml vegetable broth

  • 1 tablespoon olive oil

Steps

  1. Drain and rinse the canned white beans, tear the kale into smaller pieces, and chop the onion for sautéing in the olive oil.

  2. Sauté the onion in the olive oil until softened to build a mild base for the white beans and kale.

  3. Pour in the broth and bring to a boil. Cook for 5 minutes.

  4. Add the white beans and kale. Cook for another 5–8 minutes, until the kale is tender but retains its color.

  5. If you want a thicker consistency, lightly mash some of the beans with a spoon before serving.
