1 can white beans
2 handfuls kale
1 onion
900 ml vegetable broth
1 tablespoon olive oil
Steps
Drain and rinse the canned white beans, tear the kale into smaller pieces, and chop the onion for sautéing in the olive oil.
Sauté the onion in the olive oil until softened to build a mild base for the white beans and kale.
Pour in the broth and bring to a boil. Cook for 5 minutes.
Add the white beans and kale. Cook for another 5–8 minutes, until the kale is tender but retains its color.
If you want a thicker consistency, lightly mash some of the beans with a spoon before serving.
