About this recipe

Red cabbage and apple soup combines the bold flavor of cabbage with gentle fruit sweetness in a vegetable broth base. Apple mellows the red cabbage and adds a pleasantly sweet-tart note. Onion sautéed in olive oil builds flavor, while the broth brings the short ingredient list together. This unusual, colorful cabbage soup makes a light yet warming meal.

Ingredients

Servings: 4

  • 300 g red cabbage

  • 1 apple

  • 900 ml vegetable broth

  • 1 onion

  • 1 tablespoon olive oil

Steps

  1. Thinly shred the red cabbage and chop the onion. Peel the apple and finely dice or grate it so the ingredients release their flavor into the broth more quickly.

  2. Sauté the onion in the olive oil for 3–4 minutes, until softened.

  3. Add the red cabbage and apple, pour in the broth, and cook for 18–25 minutes, until the cabbage is tender and the apple gently rounds out the soup’s flavor.

  4. Remove the soup from the heat and let it stand for a few minutes before serving.
