300 g red cabbage
1 apple
900 ml vegetable broth
1 onion
1 tablespoon olive oil
Steps
Thinly shred the red cabbage and chop the onion. Peel the apple and finely dice or grate it so the ingredients release their flavor into the broth more quickly.
Sauté the onion in the olive oil for 3–4 minutes, until softened.
Add the red cabbage and apple, pour in the broth, and cook for 18–25 minutes, until the cabbage is tender and the apple gently rounds out the soup’s flavor.
Remove the soup from the heat and let it stand for a few minutes before serving.
