  • 4 onions

  • 1 apple

  • 900 ml vegetable broth

  • 1 tablespoon olive oil

  • 2 slices bread

Steps

  1. Peel and quarter the onions, then cut the apple into large pieces. Set the bread aside for making toast.

  2. Drizzle the onions and apple with the olive oil, arrange them on a baking sheet, and roast at 200°C for 25–30 minutes, until the onion is tender and lightly browned.

  3. Transfer the roasted onion and apple to a pot, pour in the vegetable broth, and cook for 10–15 minutes so their sweet roasted flavor infuses the soup.

  4. Blend the roasted onion and apple with the broth until smooth. Toast the bread separately and add it only at serving time so it stays crisp.
