Ingredients

200 g thinly sliced beef
80 g rice noodles
1 liter broth
1/2 onion
2 cm fresh ginger
1 star anise or 2 cloves
1 tablespoon soy sauce
juice of 1/2 lime
a handful of cilantro or chives
Steps
Halve the onion and ginger, then toast them in a dry skillet for 2–3 minutes, until very fragrant.
Combine the broth, toasted onion, ginger, star anise or cloves, and soy sauce in a pot. Simmer over low heat for 15 minutes.
Prepare the rice noodles separately according to the package directions; usually, soaking them in hot water for a few minutes is sufficient.
Strain the broth, season it with the lime juice, and bring it to a boil. Add the thinly sliced beef to the boiling broth and cook briefly until no longer raw. Divide the noodles among bowls, ladle in the broth and beef, and sprinkle with cilantro or chives.
