  • 3 beets

  • 1 apple

  • 850 ml vegetable broth

  • 1 onion

Steps

  1. Preheat the oven to 200°C. Peel the beets and cut them into small dice, then quarter the onion.

  2. Arrange the beets and onion on a baking sheet, drizzle with the olive oil, and roast for 30–35 minutes, until the beets are tender.

  3. Transfer the roasted beets and onion to a pot, add the apple, pour in the broth, and cook for 10–12 minutes.

  4. Blend the roasted beets, onion, apple, and broth until smooth, then stir in the cream. Warm briefly and serve once the beet flavor has melded with the apple's sweetness.
