1 liter vegetable broth
450 ml tomato passata
80 g bulgur
1 carrot
1 tablespoon olive oil
Steps
Peel and finely dice the carrot, and have the tomato passata, bulgur, broth, and olive oil ready.
Heat the olive oil in a pot and cook the carrot for 3–4 minutes. Pour in the broth and tomato passata, then bring to a gentle simmer.
Add the bulgur and cook for 10–12 minutes, until tender.
Remove the soup from the heat when the bulgur is tender but not overcooked, and serve.
