  • 1 liter vegetable broth

  • 450 ml tomato passata

  • 80 g bulgur

  • 1 carrot

  • 1 tablespoon olive oil

Steps

  1. Peel and finely dice the carrot, and have the tomato passata, bulgur, broth, and olive oil ready.

  2. Heat the olive oil in a pot and cook the carrot for 3–4 minutes. Pour in the broth and tomato passata, then bring to a gentle simmer.

  3. Add the bulgur and cook for 10–12 minutes, until tender.

  4. Remove the soup from the heat when the bulgur is tender but not overcooked, and serve.
