About this recipe

Tomato soup with chicken and rice is a hearty blend of chicken broth, tomato passata, and sour cream. Cooked chicken adds protein and turns the soup into a more complete meal, while rice naturally thickens it. Sour cream softens the tomato passata’s acidity and gives the soup a smooth, home-style flavor. This is a simple, filling variation on classic tomato soup.

Ingredients

Servings: 2

  • 1 liter chicken broth

  • 450 ml tomato passata

  • 120 g cooked chicken

  • 60 g rice

  • 2 tablespoons sour cream

Steps

  1. Cut the cooked chicken into smaller pieces and rinse the rice. Have the tomato passata, broth, and sour cream ready.

  2. Combine the broth and tomato passata and bring to a gentle boil. Add the rice and cook for 12–15 minutes, until tender.

  3. Add the cooked chicken and heat for 3–4 minutes.

  4. Temper the sour cream with a few tablespoons of the soup, pour it into the pot, and heat for 1–2 minutes without bringing the soup to a vigorous boil.
