  • 1 liter homemade vegetable broth

  • 500 ml tomato passata

  • 80 g rice

  • 1 carrot

  • 2 tablespoons sour cream

Steps

  1. Peel and finely dice the carrot, then rinse the rice in a sieve.

  2. Combine the broth and tomato passata, add the carrot, bring to a gentle boil, and cook for 5 minutes.

  3. Add the rice and cook for 12–15 minutes, stirring every few minutes, until tender but not overcooked.

  4. Temper the sour cream with a few tablespoons of hot soup, pour it into the pot, and heat for 1–2 minutes without bringing the soup to a vigorous boil.
