Tomato soup with rice is a home-style soup made with vegetable broth, tomato passata, and rice cooked directly in the pot. Carrot adds natural sweetness, while sour cream softens the tomatoes’ acidity and gives the soup more body. Rice makes it more filling than plain tomato soup without complicating the preparation. Simmer it gently until the rice is tender, taking care not to let it become too sticky.

1 liter homemade vegetable broth
500 ml tomato passata
80 g rice
1 carrot
2 tablespoons sour cream
Steps
Peel and finely dice the carrot, then rinse the rice in a sieve.
Combine the broth and tomato passata, add the carrot, bring to a gentle boil, and cook for 5 minutes.
Add the rice and cook for 12–15 minutes, stirring every few minutes, until tender but not overcooked.
Temper the sour cream with a few tablespoons of hot soup, pour it into the pot, and heat for 1–2 minutes without bringing the soup to a vigorous boil.
