Ingredients

  • 1 liter vegetable broth

  • 500 ml tomato passata

  • 80 g small pasta

  • 1 carrot

  • 2 tablespoons sour cream

Steps

  1. Peel and finely dice the carrot, and have the tomato passata, pasta, broth, and sour cream ready before cooking.

  2. Pour the broth and tomato passata into a pot, add the carrot, and cook for 8–10 minutes, until it begins to soften.

  3. Add the pasta and cook for 6–8 minutes, until tender but not overcooked.

  4. Temper the sour cream with some of the hot tomato base, stir it into the soup, and heat briefly, taking care not to overcook the pasta.
