Classic naleśniki are delicate, thin Polish crêpes that work with both sweet and savory fillings. The batter uses just a few basic ingredients—flour, milk, water, and eggs—and a short rest makes the crêpes easier to cook. Serve them with twaróg (Polish farmer’s cheese), jam, fresh fruit, or a vegetable filling. This recipe makes about 8 naleśniki, each 22–24 cm in diameter.

Batter

  • 200 g all-purpose flour

  • 300 ml milk

  • 200 ml water, preferably sparkling

  • 2 eggs

  • 1/2 teaspoon salt

  • 2 tablespoons vegetable oil, divided

Steps

  1. Place the flour and salt in a large bowl, then add the milk, water, eggs, and 1 tablespoon of the oil. Whisk or mix briefly with an electric mixer until the batter is uniform and free of large lumps.

  2. Let the batter rest at room temperature for 20 minutes so the flour can absorb the liquid and the mixture becomes smoother. Stir briefly after resting; it should be thin and pourable, like light cream.

  3. Heat a 22–24 cm nonstick skillet over medium heat for about 2 minutes. Use a pastry brush or paper towel to coat it lightly with some of the remaining 1 tablespoon oil.

  4. Pour about 60 ml batter into the skillet and quickly swirl the pan to spread it into a thin layer. Cook for about 60–90 seconds, until the top is set, the edges look slightly dry, and the underside is golden.

  5. Flip the naleśnik with a wide spatula and cook the second side for 30–45 seconds, until lightly golden and dry to the touch. Repeat with the remaining batter, brushing the skillet with the remaining oil only if the naleśniki begin to stick.

  6. Stack the cooked naleśniki and serve warm with your choice of sweet or savory filling. If holding them before serving, cover the stack with a plate or plastic wrap to keep them from drying out.
