Pancake Ingredients

  • 250 g part-skim twaróg (Polish farmer’s cheese)

  • 2 ripe bananas

  • 2 eggs

  • 120 ml milk

  • 120 g all-purpose flour

  • 1 teaspoon baking powder

  • 1 medium apple

  • 1 teaspoon cinnamon

  • 1 tablespoon sugar or honey, optional

  • 1 pinch of salt

  • 2 tablespoons oil, for frying

To Serve

  • 200 g plain yogurt or skyr

  • a handful of fresh fruit

  • 1 tablespoon honey or maple syrup, optional

Steps

  1. In a bowl, mash the bananas with a fork, then add the twaróg and eggs and mix until combined; small lumps of twaróg may remain.

  2. Pour in the milk and add the flour, baking powder, cinnamon, salt, and optional sugar or honey. Mix briefly to form a thick batter.

  3. Grate the apple on the coarse side of a grater and gently fold it into the batter just before frying.

  4. Heat a little oil in a skillet over medium heat. Spoon in 1.5–2 tablespoons of batter per pancake and flatten each portion slightly.

  5. Cook the pancakes for 2–3 minutes per side, until golden and springy to the touch. Reduce the heat if needed so they do not burn on the outside.

  6. Serve immediately with yogurt, fresh fruit, and a little honey or maple syrup.
