About this recipe

Mushroom and chive tofu scramble is an aromatic skillet breakfast best served as soon as it is ready. Browning the mushrooms deepens their flavor, tofu provides a soft, filling base, and chives add a fresh finish. Cook off the mushrooms' moisture before adding the tofu so the scramble is not watery and develops fuller flavor. Turmeric gives the dish a golden color without masking the mushrooms. Serve it with rye bread, a tortilla, or a simple salad.

Ingredients

Servings: 2

  • 180 g plain tofu

  • 120 g button mushrooms

  • 1 teaspoon turmeric

  • 2 tablespoons chives

  • 2 slices bread or 1 tortilla

  • 1 teaspoon olive oil

Steps

  1. Drain the tofu and crumble it with a fork, then slice the mushrooms.

  2. Sauté the mushrooms in the olive oil for 5–7 minutes, until their moisture has evaporated and they are lightly browned.

  3. Add the tofu and turmeric, then cook for a few more minutes, stirring.

  4. Stir in the chives at the end and serve immediately with bread or a tortilla.
