Oatmeal
100 g certified gluten-free rolled oats
400 ml unsweetened soy milk or certified gluten-free oat milk
2 tablespoons unsweetened cocoa powder
1 teaspoon vanilla extract
a pinch of salt
Date Caramel
100 g soft pitted dates
80 ml hot water
2 tablespoons natural peanut butter (100% peanuts)
1/4 teaspoon salt
Toppings
20 g dairy-free dark chocolate, chopped
20 g unsalted peanuts, chopped
Steps
Pour the hot water over the dates and let stand for 10 minutes. Transfer them with the water to a blender jar, add the peanut butter and salt, then blend into a smooth, thick sauce. If using a countertop blender, do not seal it tightly with hot water inside; cover the opening with a kitchen towel and blend carefully.
Divide the hot oatmeal between two bowls and wait 1–2 minutes for the surface to settle slightly.
Sprinkle the oatmeal with chopped dairy-free dark chocolate and peanuts. Serve immediately as the chocolate begins to soften from the warmth of the oatmeal.
