Oatmeal

  • 100 g certified gluten-free rolled oats

  • 400 ml unsweetened soy milk or certified gluten-free oat milk

  • 2 tablespoons unsweetened cocoa powder

  • 1 teaspoon vanilla extract

  • a pinch of salt

Date Caramel

  • 100 g soft pitted dates

  • 80 ml hot water

  • 2 tablespoons natural peanut butter (100% peanuts)

  • 1/4 teaspoon salt

Toppings

  • 20 g dairy-free dark chocolate, chopped

  • 20 g unsalted peanuts, chopped

Steps

  1. Pour the hot water over the dates and let stand for 10 minutes. Transfer them with the water to a blender jar, add the peanut butter and salt, then blend into a smooth, thick sauce. If using a countertop blender, do not seal it tightly with hot water inside; cover the opening with a kitchen towel and blend carefully.

  2. In a saucepan, combine the rolled oats, plant-based milk, cocoa, vanilla, and a pinch of salt. Cook over low heat for 7–8 minutes, stirring often, until the oats are tender and the oatmeal thickens noticeably; do not let the bottom scorch.

  3. Divide the hot oatmeal between two bowls and wait 1–2 minutes for the surface to settle slightly.

  4. Spoon half of the date caramel onto each serving and gently spread it over the top or make decorative swirls.
