About this recipe
Apple pancakes are soft skillet pancakes made with eggs, milk, all-purpose flour, and grated or finely chopped apple. The apple adds moisture and natural sweetness, while cinnamon brings out its warm, dessert-like flavor. Baking powder creates a lighter texture so the pancakes do not become dense. Cook them over medium heat so the centers have time to cook through before the outsides brown deeply.
Ingredients
Servings: 4
1 apple
2 eggs
150 g all-purpose flour
120 ml milk
1 teaspoon cinnamon
1 teaspoon baking powder
2 tablespoons sugar
Steps
Whisk the eggs with the milk and sugar until the sugar begins to dissolve.
Add the flour, baking powder, cinnamon, and grated apple, then stir briefly just until combined.
Let the batter rest for 5 minutes so the grated apple releases its juice into the flour.
Spoon small portions onto a well-heated nonstick skillet and cook without additional fat for 2–3 minutes per side.
Turn the pancakes when the edges are set and the apple smells fragrant with cinnamon.
