About this recipe

Baked blueberry sernik is a creamy Polish cheesecake made with twaróg, eggs, and vanilla pudding powder, with juicy blueberries throughout. The fruit adds color, a light tang, and freshness that balance the sugar. The pudding powder helps the cheesecake set, and distributing the berries evenly ensures that they appear in every slice. After baking, cool the sernik gradually and chill it completely.

Ingredients

Servings: 8

  • 750 g finely ground twaróg (Polish farmer’s cheese)

  • 3 eggs

  • 150 g sugar

  • 150 g blueberries

  • 40 g gluten-free vanilla pudding powder (cook-and-serve)

  • 150 ml whipping cream (30% fat)

Steps

  1. Combine the twaróg with the sugar, eggs, and whipping cream without beating vigorously.

  2. Stir in the vanilla pudding powder last, until no dry lumps of powder remain.

  3. Pat the blueberries dry and scatter them over the cheese mixture, pressing them lightly into the top.

  4. Bake the blueberry sernik at 160–170°C for 55–70 minutes, until the edges are set and the center is slightly springy.

  5. Leave the sernik in the oven with the door slightly ajar for 30–40 minutes, then refrigerate it until completely chilled.
