Ingredients

  • 750 g finely ground twaróg (Polish farmer’s cheese)

  • 3 eggs

  • 150 g sugar

  • 4 peach halves

  • 40 g gluten-free vanilla pudding powder (cook-and-serve)

  • 150 ml whipping cream (30% fat)

Steps

  1. Mix the twaróg, sugar, eggs, and cream on low speed or with a spatula.

  2. Add the vanilla pudding powder and mix only briefly so the mixture does not incorporate too much air.

  3. Drain the peaches well, cut them into smaller pieces, and arrange them over the twaróg mixture.

  4. Bake the peach sernik at 160–170°C for 55–70 minutes, until the edges are set and the center is slightly springy.

  5. Leave the sernik in the oven with the door slightly ajar for 30–40 minutes, then let it finish cooling before refrigerating.
