About this recipe

Vanilla baked sernik is a classic Polish dessert made with finely ground twaróg, eggs, cream, and vanilla pudding powder. Its short ingredient list and mild flavor make it suitable for a family table or as a make-ahead dessert. The pudding powder helps the filling set and enhances the delicate vanilla aroma, while the cream gives it a smoother texture. Cool the sernik slowly, then chill it thoroughly so the center sets and slices cleanly.

Ingredients

Servings: 10

  • 750 g finely ground twaróg (Polish farmer’s cheese)

  • 3 eggs

  • 150 g sugar

  • 100 ml cream

  • 40 g gluten-free vanilla pudding powder (cook-and-serve)

Steps

  1. Briefly mix the twaróg with the sugar, eggs, and cream, just until smooth.

  2. Add the vanilla pudding powder last and combine without incorporating air.

  3. Pour the batter into the pan, smooth the top, and tap the pan on the counter to remove large air bubbles.

  4. Bake the vanilla sernik at 160–170°C for 55–70 minutes, until the edges are set and the center is slightly springy.

  5. Cool the sernik slowly: leave it in the oven with the door slightly ajar for 30–40 minutes, then refrigerate for several hours.
