This banana pudding is a creamy, mild homemade dessert made with milk, banana, egg yolks, and potato starch. Banana adds natural sweetness; mash it thoroughly or combine it with some of the milk for a smoother texture. Egg yolks give the pudding a fuller flavor, while starch provides the thickness. Cook slowly and stir constantly until the mixture is thick and smooth.

500 ml milk
1 banana
2 egg yolks
2 tablespoons potato starch
1 tablespoon sugar
Steps
Combine about 150 ml cold milk with the egg yolks, sugar, and starch; whisk into a smooth, lump-free slurry.
Mash the banana with a fork into a smooth purée. Heat the remaining milk—about 350 ml—in a saucepan for 2–3 minutes without bringing it to a vigorous boil.
Add the banana purée to the hot milk and mix thoroughly. Pour in the egg yolk and starch slurry in a thin stream, whisking vigorously throughout.
Cook over low heat for 1–2 minutes after the pudding thickens, stirring constantly, until it no longer tastes of raw starch.
Remove from the heat and whisk briefly once more so the banana purée is evenly distributed. Divide the pudding among four serving dishes.
