About this recipe

White chocolate pudding is a smooth homemade milk dessert thickened with egg yolks and potato starch. White chocolate gives it gentle sweetness and a creamy flavor, so only a small amount of sugar is needed to keep the dessert from becoming overly heavy. Slowly combining the hot milk with the starch-and-yolk mixture is essential for a smooth pudding without lumps. Serve it slightly warm or chilled, when it becomes firmer and more velvety.

Ingredients

Servings: 4

  • 500 ml milk

  • 2 egg yolks

  • 2 tablespoons potato starch

  • 40 g white chocolate

  • 1 tablespoon sugar

Steps

  1. In a separate bowl, combine the egg yolks, sugar, starch, and about 150 ml cold milk until no dry lumps remain.

  2. Chop the white chocolate and melt it into the remaining hot milk, about 350 ml, over gentle heat.

  3. Once the chocolate has melted into the milk, pour in the egg mixture and stir until it begins to thicken.

  4. Cook the white chocolate pudding over low heat for 1–2 minutes, until thick and the raw starch taste is gone.

  5. Serve the white chocolate pudding in small portions because it is sweeter and creamier than the classic version.
