Ingredients
Dough
170 g butter, softened
120 g superfine sugar
150 g light brown sugar
1 large egg
1 teaspoon vanilla extract
280 g all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
180 g dark or semisweet chocolate, chopped into pieces
Steps
In a large bowl, beat the softened butter, sugar, and brown sugar with a mixer on medium speed for about 3 minutes, until the mixture is light and fluffy.
Add the egg and vanilla extract, and mix for about 1 minute more, until the ingredients are thoroughly combined.
In a separate bowl, mix the flour, baking soda, and salt. Add the dry ingredients to the butter mixture and mix briefly, just until no dry flour remains.
Add the chopped chocolate and fold with a spatula so the pieces are evenly distributed throughout the dough.
Preheat the oven to 180°C and line the baking sheets with parchment paper. Scoop portions of dough of about a tablespoon, arrange them with space between them, and bake in batches for 12–15 minutes, until the edges are golden and the centers remain slightly soft. Cool the cookies on the baking sheet for 5 minutes, then transfer them to a wire rack.
