These layered fruit gelatin and yogurt dessert cups combine fruit, a creamy yogurt layer, and plain crisp cookies. Plain or Greek yogurt, fruit-flavored gelatin, and fresh fruit form a light, creamy, refreshing dessert with distinct layers. The dessert is easy to make ahead and stays well set after chilling.
Ingredients
Servings: 6
Fruit Gelatin
2 packages fruit-flavored gelatin, 75 g each, in different flavors
900 ml boiling water, divided into 450 ml for each gelatin mixture
Yogurt Layer
600 g plain yogurt or Greek yogurt
3 tablespoons powdered sugar
1 teaspoon vanilla extract
Add-Ins and Finishing
250 g strawberries or raspberries, fresh or frozen and thawed
2 bananas
12 plain crisp cookies or sponge cookies, crushed
Steps
Prepare the gelatin mixtures separately: dissolve each package in 450 ml boiling water, stirring thoroughly, then let them cool until cold but still liquid.
Slice the bananas and prepare the strawberries or raspberries for layering. Crush the plain crisp cookies or sponge cookies into coarse crumbs.
Add a thin layer of cookie crumbs to dessert glasses or plastic containers, then add a portion of the yogurt and the fruit.
Pour in some of the first, slightly thickened gelatin mixture and refrigerate the containers for about 20–30 minutes, until the layer begins to set.
Spoon another portion of yogurt over the set layer, add the remaining fruit, and finish with the second gelatin mixture. Chill the dessert for at least 2 hours, until well set.
Before serving, decorate with a few pieces of fruit or a sprinkling of cookie crumbs. Serve well chilled.
