Mango-lime sorbet with mint is light, refreshing, and easy to make at home. Ripe mango, lime juice, and a little sugar syrup blend into a smooth, intensely fruity dessert. After freezing, briefly blend it again or break it up with a fork to lighten the texture. It works well when you want something cold and fresh without an ice cream maker.

Ingredients

Servings: 6

Sorbet

  • 2 ripe mangoes, peeled and diced (about 700 g flesh)

  • 120 ml lime juice (from 3–4 limes)

  • 80 ml water

  • 70 g sugar

  • 10 mint leaves

  • 1 pinch of salt

For Serving

  • a few mint leaves

  • lime slices

Steps

  1. In a small saucepan, heat the water and sugar just until the sugar crystals dissolve. Remove from the heat and let cool completely.

  2. Place the mango, lime juice, mint leaves, and a pinch of salt in a blender. Pour in the cooled syrup and blend until very smooth.

  3. Pour the mixture into a shallow container and place in the freezer for about 3 hours. After 45 minutes, stir with a fork, then repeat 2–3 more times to break up the ice crystals.

  4. When the mixture is firmly frozen, remove it from the freezer for 5–10 minutes. Then briefly blend again or mash with a fork so the sorbet is creamier.

  5. Scoop the sorbet into chilled bowls and garnish with mint leaves and a slice of lime. Serve immediately.
