Strawberry-lime sorbet with mint is a quick, light dessert for hot days, with intense fruit flavor, pronounced lime tartness, and a fresh mint aroma. It requires only a few simple ingredients, no ice cream maker, and no dairy. Once frozen, it becomes a smooth, refreshing dessert that works well after dinner, at a summer party, or as a chilled daytime snack.

700 g strawberries, fresh or frozen
120 g sugar
120 ml water
2 limes (grated zest and 60 ml juice)
8–10 fresh mint leaves
1 pinch of salt
Steps
In a saucepan, combine the water and sugar and heat over medium heat, stirring until the sugar has completely dissolved. Remove from the heat and set the syrup aside to cool for 10 minutes.
Wash the strawberries, remove the stems, and, if they are large, cut them in half. If using frozen strawberries, leave them for 5 minutes to soften slightly.
Add the strawberries, cooled syrup, lime juice and zest, mint, and a pinch of salt to a blender. Blend very thoroughly until smooth.
Strain the mixture through a fine-mesh sieve if you want an exceptionally velvety sorbet. Taste and, if needed, add a little more lime juice or sugar.
Pour the mixture into a shallow container and place in the freezer for 3–4 hours. Every 30–40 minutes, stir vigorously with a fork or whisk, breaking up any ice crystals that form.
Before serving, leave the sorbet at room temperature for 5–10 minutes so it is easier to scoop with a spoon. Serve immediately, preferably in chilled dessert cups.
