About this recipe
Szarlotka sypana is a simple Polish apple cake that requires no kneaded shortcrust base. A dry mixture of all-purpose flour, semolina, and sugar is layered with apples, while plant-based butter melts through the layers as they bake and brings them together into a moist, compact cake. The apples release enough juice to moisten the dry mixture and create the cake's characteristic texture. Let the cake cool completely before slicing so the layers can set.
Ingredients
Servings: 10
1 kg apples
150 g all-purpose flour
120 g semolina
120 g sugar
120 g plant-based butter
1 teaspoon cinnamon (about 2.6 g)
Steps
Coarsely grate the apples and mix with the cinnamon.
Combine the flour, semolina, and sugar in a separate bowl.
In a baking pan, alternate layers of the dry ingredients and apples, starting with a dry layer.
Arrange thin slices of plant-based butter over the top.
Bake at 180°C for about 50 minutes, until the top is golden and the apple juice has moistened the dry layers.
