These crisp cranberry cookies are made with all-purpose flour, egg, sugar, plant-based butter, and dried cranberries. The cranberries add a slightly tart, fruity contrast so the cookies are not simply sweet. Distribute them evenly through the dough so every portion contains some fruit. Bake until pale golden so the edges are crisp and the centers stay tender.

Ingredients

  • 200 g all-purpose flour

  • 120 g plant-based butter

  • 70 g sugar

  • 1 egg

  • 50 g dried cranberries

Steps

  1. Mix the plant-based butter with the sugar and egg.

  2. Add the flour and dried cranberries; coarsely chop any larger berries first if desired.

  3. Shape the dough into small, slightly flattened cookies.

  4. Bake at 175–180°C for 12–15 minutes, until the edges are golden.

  5. Remove from the baking sheet after a few minutes, once the cookies have firmed slightly.
