About this recipe

These crisp lemon cookies are flavored with zest for a fresh aroma without any heavy cream or glaze. All-purpose flour, egg, sugar, and plant-based butter form the simple base, while lemon balances the sweetness and lightens the flavor. Finely grate only the yellow zest, avoiding the bitter white pith. Bake just until lightly browned for the best crisp texture.

Ingredients

Servings: 10

  • 200 g all-purpose flour

  • 120 g plant-based butter

  • 70 g sugar

  • 1 egg

  • zest of 1/2 lemon

Steps

  1. Mix the plant-based butter with the sugar, egg, and finely grated lemon zest.

  2. Add the flour and briefly combine into a soft dough.

  3. If the mixture is too sticky, chill it for 10–15 minutes.

  4. Shape small cookies and bake at 175–180°C for 10–15 minutes, until the bottoms are lightly golden.

  5. Cool before serving so the lemon aroma becomes more pronounced.
