About this recipe

These peanut butter cookies are crisp, boldly flavored cookies made from a simple dough of all-purpose flour, egg, sugar, and plant-based butter. Peanut butter adds a deep aroma and lightly salty note that distinguishes them from plain crisp cookies. Mix the dough only until combined so the cookies remain tender. Bake just until lightly browned, before they become dry.

Ingredients

Servings: 12

  • 180 g all-purpose flour

  • 80 g peanut butter

  • 60 g plant-based butter

  • 70 g sugar

  • 1 egg

Steps

  1. Mix the peanut butter with the plant-based butter, sugar, and egg.

  2. Add the flour and combine into a soft, cohesive dough.

  3. Shape the dough into balls, flatten them slightly, and press a fork crosshatch into the tops if desired.

  4. Bake at 175–180°C for 10–14 minutes, until the edges begin to brown.

  5. Leave the cookies on the baking sheet for a few minutes because they are very soft when first removed from the oven.
