Pear and cocoa muffins are soft muffins that pair the chocolate flavor of cocoa with juicy pear. Milk, butter, and eggs create a tender base, while baking powder gives the muffins a fluffy texture. Cut the pear into small dice so it is evenly distributed and does not weigh down the centers. Cocoa adds depth, while the fruit keeps the muffins from turning out dry.

Ingredients

  • 180 g all-purpose flour

  • 2 eggs

  • 120 ml milk

  • 1 pear

  • 1 tablespoon cocoa powder

  • 70 g sugar

  • 1 teaspoon baking powder

  • 60 g butter

Steps

  1. Preheat a conventional oven (no fan) to 180°C and prepare 8 muffin cups with paper liners.

  2. In one bowl, thoroughly mix the flour, cocoa powder, sugar, and baking powder.

  3. In a second bowl, whisk the eggs with the milk and melted, slightly cooled butter. Peel and core the pear, then cut it into cubes about 1 cm on each side.

  4. Pour the wet ingredients into the dry ingredients and mix briefly, just until no dry flour remains. Add the pear and gently distribute it through the batter with a few strokes of a spatula.

  5. Divide the batter among 8 paper liners and bake on the middle rack for 18–22 minutes, until a toothpick inserted away from a piece of pear comes out free of wet batter.

  6. After 5 minutes, remove the muffins from the pan and transfer them to a wire rack to cool completely.
