Chocolate muffins are simple muffins made with milk, butter, and eggs, with cocoa powder for a more intense flavor. Cocoa gives the batter a dark color and dessert-like aroma, while butter makes the muffins soft and tender. Mix only until no dry streaks of flour remain because overmixing can make the batter too thick. Once baked, the muffins should be springy, moist inside, and distinctly cocoa-flavored.

  • 180 g all-purpose flour

  • 2 eggs

  • 120 ml milk

  • 60 g butter

  • 2 tablespoons cocoa powder

  • 70 g sugar

  • 1 teaspoon baking powder

Steps

  1. Preheat the oven to 180°C, line a muffin pan with paper liners, and position a rack in the middle of the oven.

  2. Whisk the flour, sugar, baking powder, and cocoa powder together in a bowl until no dark cocoa lumps remain.

  3. In a second bowl, whisk the eggs with the milk and cooled melted butter.

  4. Pour the wet ingredients into the dry and mix briefly; a few small flour lumps are better than overmixed batter.

  5. Divide the chocolate batter among the muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.

  6. After baking, leave the muffins in the pan for a few minutes, then transfer them to a wire rack.
