Mix only until no dry streaks of flour remain because overmixing can make the batter too thick. Once baked, the muffins should be springy, moist inside, and distinctly cocoa-flavored.

180 g all-purpose flour
2 eggs
120 ml milk
60 g butter
2 tablespoons cocoa powder
70 g sugar
1 teaspoon baking powder
Steps
Preheat the oven to 180°C, line a muffin pan with paper liners, and position a rack in the middle of the oven.
Whisk the flour, sugar, baking powder, and cocoa powder together in a bowl until no dark cocoa lumps remain.
In a second bowl, whisk the eggs with the milk and cooled melted butter.
Pour the wet ingredients into the dry and mix briefly; a few small flour lumps are better than overmixed batter.
Divide the chocolate batter among the muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.
After baking, leave the muffins in the pan for a few minutes, then transfer them to a wire rack.
