  • 180 g all-purpose flour

  • 2 eggs

  • 120 ml milk

  • 60 g butter

  • 120 g raspberries

  • 70 g sugar

  • 1 teaspoon vanilla sugar or 1/2 teaspoon vanilla extract

  • 1 teaspoon baking powder

Steps

  1. Line a muffin pan with paper liners and preheat the oven to 180°C.

  2. Mix the flour with the sugar, vanilla sugar, and baking powder; set the raspberries aside to fold in at the end.

  3. Whisk the eggs with the milk and melted butter, making sure the butter is not hot.

  4. Combine the wet and dry ingredients with a few strokes, then gently fold in the raspberries.

  5. Divide the vanilla batter among the muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.

  6. Cool the muffins on a wire rack so the delicate fruit muffins do not trap steam underneath.
