180 g all-purpose flour
2 eggs
120 ml milk
50 g shredded coconut
60 g butter
70 g sugar
1 teaspoon baking powder
Steps
Prepare a muffin pan with paper liners before mixing the batter, and preheat the oven to 180°C.
Mix the flour with the sugar, baking powder, and shredded coconut.
Combine the eggs with the milk and melted butter, keeping the shredded coconut with the dry ingredients.
Briefly combine the wet and dry ingredients so the shredded coconut is evenly distributed through the batter.
Divide the coconut batter among the muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.
After a few minutes, transfer the muffins to a wire rack once they are firm enough to handle.
