  • 180 g all-purpose flour

  • 2 eggs

  • 120 ml milk

  • 60 g butter

  • 50 g chocolate

  • 70 g sugar

  • 1 teaspoon baking powder

Steps

  1. Preheat the oven to 180°C and place paper liners in the muffin pan before chopping the chocolate.

  2. Mix the flour with the sugar and baking powder, and chop the chocolate separately.

  3. In a separate bowl, whisk the milk, eggs, and melted butter before combining them with the flour mixture.

  4. Mix the wet ingredients into the dry, then fold in the chopped chocolate at the very end.

  5. Divide the chocolate chunk batter among the muffin cups and bake for 18–22 minutes, until a toothpick comes out clean.

  6. Cool on a wire rack so the chocolate inside can firm up slightly before eating.
