Ingredients
Servings: 4
250 ml whipping cream (30% fat)
150 ml milk
1 teaspoon agar-agar
100 g raspberries
1 tablespoon sugar
Steps
Pour the cream and milk into a saucepan and add the sugar; reserve the raspberries for the fruit layer.
Add the agar-agar to the cool or slightly warm cream-and-milk mixture, whisking immediately to prevent lumps.
Bring the base to a boil, then cook it over low heat for 1–2 minutes, stirring constantly before removing it from the heat.
Mash the raspberries with a fork. Pour the base into serving dishes and let it stand for about 10 minutes, until the surface begins to set, then spoon the raspberries over the top.
Chill the dessert for several hours, until the agar base is set and the raspberry layer complements the cream flavor.
