Vanilla panna cotta is a chilled dessert made with cream, milk, sugar, vanilla, and agar-agar. Cream creates a velvety base, milk lightens it slightly, and vanilla adds a simple, classic aroma. Agar-agar gives the dessert a stable set, so disperse it thoroughly and boil it briefly with the liquid. After several hours in the refrigerator, the panna cotta should be smooth and set but still delicate when spooned.
Ingredients
Servings: 4
250 ml whipping cream (30% fat)
150 ml milk
1 teaspoon agar-agar
1 tablespoon sugar
a pinch of vanilla
Steps
Pour the cream and milk into a saucepan, then add the sugar and vanilla.
Add the agar-agar to the milk and cream before bringing it to a boil, stirring immediately to distribute it evenly through the vanilla base.
Once the mixture reaches a boil, cook it over low heat for 1–2 minutes, stirring constantly so the agar activates properly.
Slowly pour the mixture into serving dishes. If you see small agar lumps on the surface, strain it so the panna cotta is smooth.
Chill the dessert for several hours, until the vanilla base is completely set but still delicate and creamy.
