Blueberry chia pudding is a simple make-ahead dessert made with milk, chia seeds, honey, and vanilla. After several hours of chilling, the chia thickens the milk into a creamy base, while blueberries add juiciness and a light fruit contrast. Stir the pudding again a few minutes after mixing it so the seeds do not settle on the bottom. Fold the blueberries into the finished pudding or arrange them on top just before serving.

Ingredients

Servings: 2

  • 3 tablespoons chia seeds

  • 250 ml milk

  • 120 g blueberries

  • 1 teaspoon honey

  • a pinch of vanilla

Steps

  1. Add the chia seeds to the milk with the honey and vanilla, then stir for a dozen or so seconds so the seeds disperse through the liquid right away.

  2. After 10 minutes, stir the pudding once more before the seeds are fully hydrated.

  3. Rinse and dry the blueberries so they do not thin the pudding.

  4. Refrigerate for several hours. Before serving, check the consistency and thin the pudding with a little milk if needed.

  5. Serve with the blueberries folded into the top layer.
