  • 3 tablespoons chia seeds

  • 250 ml coconut milk beverage

  • 100 g mango

  • 1 teaspoon maple syrup

  • a pinch of vanilla

Steps

  1. Thoroughly mix the chia seeds with the coconut milk beverage, maple syrup, and vanilla.

  2. After 10 minutes, stir again, scraping along the bottom and sides because the chia seeds settle quickly and can form lumps.

  3. Cut the mango into small cubes or mash it into a thick purée.

  4. Cover and refrigerate the pudding for at least 3 hours, until noticeably thickened.

  5. Spoon the pudding into glasses and add the mango just before serving.
