60 g semolina
500 ml milk
1 teaspoon cocoa powder
1 teaspoon sugar
a pinch of vanilla
Steps
From the 500 ml milk, reserve 2 tablespoons and keep that portion cold. Heat the remaining milk in a saucepan over medium heat for 2–3 minutes.
Mix the cocoa powder, sugar, and vanilla with the reserved cold milk into a smooth paste. Add it to the warm milk and whisk.
When the cocoa milk begins to simmer gently, add the semolina in a thin stream, stirring constantly.
Cook over low heat for 3–4 minutes, stirring constantly, until the semolina thickens and loses its floury taste.
Divide the semolina between two bowls and let stand for 5 minutes before serving.
