About this recipe

Cinnamon rice pudding is a classic, simple dessert with a creamy texture and the warm aroma of spices. Rice cooked slowly in milk becomes tender and delicate, while cinnamon and vanilla give it a comforting, homemade flavor. It uses only a little sugar, so the pudding is not overly sweet. For the best result, let the rice absorb the milk slowly and stir it several times near the end of cooking.

Ingredients

Servings: 4

  • 100 g short-grain dessert rice

  • 500 ml milk

  • 1 teaspoon sugar

  • 1/2 teaspoon cinnamon

  • a pinch of vanilla

Steps

  1. Rinse the rice in a sieve and transfer it to a saucepan with the milk and sugar.

  2. Cook gently for 18–20 minutes, stirring frequently along the bottom, until the rice has absorbed most of the milk.

  3. Add the cinnamon and vanilla near the end of cooking, when the rice is almost tender.

  4. Spoon into bowls; the cinnamon should already be mixed into the rice.

  5. Serve warm right away, or let it cool if you prefer a thicker dessert.
