  • 3 tablespoons chia seeds

  • 250 ml coconut milk beverage

  • 120 g strawberries

  • 1 teaspoon maple syrup

  • 1 tablespoon shredded coconut

Steps

  1. Stir the chia seeds thoroughly with the coconut milk beverage and maple syrup.

  2. After 10 minutes, stir again, scraping the spoon all the way across the bottom of the container.

  3. Slice the strawberries; you can mash about 1/3 of the fruit to release its juice.

  4. Chill the pudding for at least 3 hours, until the coconut base is thick and spoonable.

  5. Before serving, add the strawberries and shredded coconut.
