This raspberry chia pudding is a simple no-cook dessert that can be prepared ahead. After several hours in milk, the chia seeds swell into a thick, creamy base, while raspberries add fresh, lightly tart flavor. Honey gently sweetens the pudding, and vanilla gives the milk base a more dessert-like note. Stir again a few minutes after mixing so the chia seeds stay evenly distributed without forming lumps.

Ingredients

Servings: 2

  • 3 tablespoons chia seeds

  • 250 ml milk

  • 120 g raspberries

  • 1 teaspoon honey

  • a pinch of vanilla

Steps

  1. Combine the milk with the honey and vanilla, add the chia seeds, and mix thoroughly before adding the raspberry layer.

  2. After a few minutes, stir again, breaking up any lumps along the sides of the dish.

  3. Lightly mash half of the raspberries with a fork, and leave the other half whole for decoration.

  4. Chill the pudding for at least 3 hours; after this time, the seeds should be soft in the center.

  5. Layer the pudding with the raspberries and serve well chilled.
